For most households, a 30–32" grill is perfectly sized for weeknight dinners and small gatherings. If you frequently cook for large crowds or do big entertaining, consider stepping up to a 34–40" built-in model.
Built-in grills must be installed into a non-combustible enclosure or used with a proper insulating liner if your island has combustible framing. Always follow the manufacturer's cutout and clearance requirements and make sure you properly ventilate your island. This differs from hood vents. This also may be required depending on the height of your roof.
In addition to the grill, you can add doors & drawers, trash pull-outs, side burners, refrigeration, and storage for tools and propane (if using LP). Planning these pieces up front helps you choose the best grill size.
