Easy Grilled Mexican Street Corn on the Cob

How to make grilled Mexican street corn

John Henrys Mojave Garlic Pepper Seasoning


  • 4 ears corn
  • 3 Tbsp mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup cilantro, freshly chopped
  • 1/2 cup parmesan cheese, freshly grated
  • 1 lime, juiced
  • John Henry’s Mojave Garlic Pepper to taste
  • 2 limes cut into wedges, for garnish


  1. Remove the husks of the corn leaving the core attached.
  2. Grill the corn by turning on a  Twin Eagles 30" outdoor gas grill or a Finex 15" cast iron grill pan. Cook until it starts to get slightly charred on all sides.
  3. In a small bowl mix the mayonnaise, sour cream, and cilantro.
  4. Remove the corn from the grill and slather it with the mayonnaise mixture using a basting brush.
  5. Squeeze the lime juice over the corn and sprinkle it generously with parmesan cheese and John Henry’s Mojave Garlic Pepper. Sprinkle with chili powder and enjoy!
  6. Optional - Garnish with Jalapeño Pepper Slices
